Fruit in syrup often tends to be too sweet and the taste of the fruit is generally masked by the sugar in the syrup. Amarena di Cantiano, (sour black cherries by Cantiano) are made with wild cherries that seep for more than three days in a small amount of sugar with a hint of spice. The result is a surprising balance between the slightly bitter taste of the fruit itself and the mix of the other ingredients.
