The main ingredient in this extraordinary speciality is not listed on the label: distance, understood as the time between when the fruit is picked and the place it is used: the quicker the time the less additives are needed. The fruit is picked at just the right point of ripeness allowing for the use of much less sugar during the candying process. The other ingredients are lemon rind, and most fundamental of al is the addition of mustard essential oil. Once the ingredients are combined the mostarda is then pan heated by hand. True Mantovana mostarda is so delicious as it is made of fresh crisp fruit that is sweet but not sickly sweet, and spicy hot just to the right degree. Savour it as an accompaniment to a selection of boiled meat or medium aged cheese.
